Best soup EVER…{so says my man}

photo-14-2If you know me well, you know I’m not the best when it comes to cooking up new things in the kitchen…well actually cooking anything in the kitchen. We’re starting off the new year eating healthy and trying new paleo recipes for the entire family. Tonight my friends, I hit it out of the park. My husbands words were, “this may be the best soup I’ve ever eaten.” Now I know it was “just” soup, but it was dang good!

Just thought I’d share this healthy delicious recipe incase any of you are interested. There are many ways you can tweek this and I’m sure more ingredients you could add. I’m a firm believer in keeping it simple. Hope you enjoy!

 

Sausage & Spinach Soup

1 medium{ish} chopped onion

dash of crushed red pepper

1 lb smoked sausage

4 minced garlic gloves

4 cups of chicken broth

2 cups of baby spinach

1-2 tsps of chopped basil

Fresh cut squash {I got a quart sized bag out of the freezer and added it to the soup}

Cook sausage {in a little water} until brown. Cut into bit size slices.

Sauté onion, garlic, red pepper, and a little salt. Add broth, sausage, and squash. Bring to a boil and simmer for 15-20 minutes.

Add spinach to the soup and cook for about 2 minutes or until the spinach is wilted.

This weeks treat is…

White Chocolate Covered Popcorn

You that know me well have figured out that I’m not the best cook/baker in the world. I am however a fine finder of easy and yummy ideas. This afternoon I made some chocolate covered popcorn for the kids teachers at school. It’s too good and easy not to share.

Here’s what you need to begin: 1 bag of Ghirardelli white morsels and one bag of microwave popcorn. Pop the popcorn first and spread it out in a plastic container, making sure there are no kernels in the bottom. Melt the chocolate according to the instructions on the bag. Be very careful not to burn the chocolate.

Once those steps are done, pour the chocolate over the popcorn and stir it together.

Take parchment paper and place it on the counter. Spread the popcorn out and let it sit for about 15 minutes.

And there you have it! An easy and delicious treat.

Breakfast Muffins anyone???

For those of you who know me well know that I am not Rachael Ray or Paula Dean. I’m more like Betty Crocker and Chef Boyardee (only because I use their boxes and cans quite often). To be blogging a recipe is a sure sign that this recipe is quick and easy. Today I made our favorite Breakfast Muffins for lunch. It’s always a hit around the Bice household; for us and for those who happen to be visiting when they come out of the oven. I’d love to say that I created this easy delicious recipe, but I got the idea from a dear family friend. So, for those of you wanting to indulge some easy yumminess here you go…

You need the following:

 1 lb of ground sausage

2 cans of Pillsbury Biscuits (I get different varieties each time…Homestyle, Buttermilk, Butter Tasting. They all work)

1 lb bag of shredded cheese

6 to 7 eggs

Muffin pan

Large Tupperware container

Steps:

First you brown the sausage and drain.

Next, scramble the eggs. (You can use the same pan. The grease from the sausage gives the eggs a little flavor)

Mix the sausage, scrambled eggs, and desired amount of cheese together in a Tupperware container. (I put a lid on it and shake it to mix. The cheese begins to melt to the spoon when stirring)

 

 

 

 

 

 

Open the can of biscuits and flatten them out. Once flattened (by hand) you can place them into the muffin pan.

 

 

 

 

 

 

Fill each biscuit with the mixture and bake according to the biscuit can directions.
