Best soup EVER…{so says my man}

photo-14-2If you know me well, you know I’m not the best when it comes to cooking up new things in the kitchen…well actually cooking anything in the kitchen. We’re starting off the new year eating healthy and trying new paleo recipes for the entire family. Tonight my friends, I hit it out of the park. My husbands words were, “this may be the best soup I’ve ever eaten.” Now I know it was “just” soup, but it was dang good!

Just thought I’d share this healthy delicious recipe incase any of you are interested. There are many ways you can tweek this and I’m sure more ingredients you could add. I’m a firm believer in keeping it simple. Hope you enjoy!


Sausage & Spinach Soup

1 medium{ish} chopped onion

dash of crushed red pepper

1 lb smoked sausage

4 minced garlic gloves

4 cups of chicken broth

2 cups of baby spinach

1-2 tsps of chopped basil

Fresh cut squash {I got a quart sized bag out of the freezer and added it to the soup}

Cook sausage {in a little water} until brown. Cut into bit size slices.

Sauté onion, garlic, red pepper, and a little salt. Add broth, sausage, and squash. Bring to a boil and simmer for 15-20 minutes.

Add spinach to the soup and cook for about 2 minutes or until the spinach is wilted.

Tis the season to be…

My husband and I absolutely LOVE this time of year; the cooler weather, the Christmas lights, weeks out of school, and the Christmas cheer that comes with it all. As I scroll through Pinterest, check off my gift list, read blogs, and plan lessons for my 3rd graders, I can see how easily ‘Tis the season to be jolly’ easily becomes ‘Tis the season to be stressed out’. I’m not sure whose idea it was to shower our children with EVERYTHING available for the year and outdo one another with gifts, but I’d sure like to chat with them.

The word says, “Love one another with brotherly affection. Outdo one another in showing honor” Romans 12:10. There is a HUGE differentiation in love/honor and over abundance of toys and electronics. Now don’t get me wrong, I enjoy giving and receiving gifts…but the attitude that drives it should be jolly, not stress.

When our oldest child was about 3 or 4 he spent the day telling everyone he couldn’t remember all that he received on Christmas morning. Tim and I were awakened to fact that we had fallen into the “trap”. We decided that Jesus received only 3 gifts, so our children could survive with 3 as well. At 14, 12, & 6, they LOVE trying to decide which 3 they want at the top of their list.  They’ve never felt deprived or done without and they covet the 3 gifts they receive each year.

All you need is LOVE!

So, what do you write in a Valentine’s card to people you don’t know?

We love because HE first loved us. 1 John 4:19

And so we know and rely on the love God has for us. God is love. Whoever lives in love lives in God, and God in them. 1 John 4:16

Mission Change is a local group that seeks to raise money and awareness for local individuals, causes and organizations in need. They conduct a Monthly Mission to show just how easy (not to mention personally rewarding) it is to make a difference in someone’s life in our community. Our family loves the opportunity to serve along side of them. The mission for February is “All you need is Love”. We’ll be serving dinner to the homeless at the Albany Rescue Mission. Our eldest son has a special place in his heart for these people and since his birthday is on Valentine’s Day, we knew this was a mission we couldn’t miss. Tonight we made 100 Valentine’s Cards to be given to the people who come to be served.

I cut cardstock into halves, printed scripture (written above) on the inside, and we glued red and pink hearts to the front. As we pondered what to write, I couldn’t help to feel blessed to be sitting with my 3 precious children discussing this topic. Trying to stay away from the traditional Roses are red, violets are blue, I feel we came up with some good things. Maybe you can use some of these and create Valentine’s for someone who needs to know the love of Jesus.
